Overview of Course

The United Nations Educational, Scientific, and Cultural Organization (UNESCO) recognizes items related to food such as the Mediterranean diet, the gastronomic meal of the French, beer culture in Belgium, and Washoku, the traditional dietary cultures of the Japanese, as part of the intangible cultural heritage of their respective nations. Food is social as well as individual. In this course, students will learn about the historical, sociological, economic, and political aspects of food and its production, marketing, and consumption. This course will provide an opportunity to study and discover the cuisines of the SAS countries. It will also provide students with opportunities to reflect on what we eat and why we eat it.
